An attempt to replicate that salty, almondy, crunchy melt-in-mouth almond cookies which I've always loved to devour during CNY and yes, i can make my own in future liao! It is really that same taste! *LOVE*

Recipe taken from Jess Kitchen

Ingredients
150g self raising flour
80g icing sugar (reduced to 60g)
80g ground almond
80g diced almonds
100g corn oil (replaced with canola oil)
1/2 tsp almond essence (omitted)
Egg yolk for brushing (omitted)

Method

Sift together flour and icing sugar, add in ground almond and diced almonds, mix well.
Mix (1) and corn oil together to form a soft dough. (the dough will come together when you roll them so don't worry about it being crumbly)
Shape into small round balls and place into small paper casing and press it slightly.
Bake in a preheated oven at 170°C for 15-20mins or until slightly brown.
Cool completely on wire rack before storing into airtight containers.

Adapted my own version from here and I simply love these muffins with the burst of orange and cranberry flavors with every bite!

60 grams of salted butter
50 grams of caster sugar
1 egg
80 grams of flour
1/4 teaspoon baking powder
5 tablespoons of unsweetened 100% all natural orange juice
suitable amount of dried cranberries

heat the orange juice and dried cranberries over the stove till warm and remove from fire
cream the butter & sugar until pale and fluffy
add the egg to butter-sugar mixture and beat till creamy
sift in the flour & baking powder into the butter mixture and mix until just combined
add in the cranberry mixture and mix lightly
spoon into muffin pan and bake at 170C until golden brown

Makes 12 mini muffins

A 200% keeper from Paula Deen (below is the actual ingredients i used)

120g of mini chocolate chips
120g of salted butter
1/2 cup plain flour
3/4 cup icing sugar
2 eggs
1 teaspoon vanilla essence

Directions:

Preheat oven to 200C
Melt chocolates and butter in the microwave or in a double boiler. Add flour and sugar to chocolate mixture. Stir in eggs until smooth. Stir in vanilla. Divide batter evenly among a muffin pan
Bake for 8 minutes. Edges should be firm but the center will be runny. Run a knife around the edge to loosen and invert onto dessert plate.
Top with vanilla ice cream or raspberry sauce. (Topping optional).

Makes 17 mini muffins

1 1/4 cups plain flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature (i omitted this)
1/2 teaspoon vanilla extract (i used 3/4 tablespoon)
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan (i used canola oil)
1 cup sugar (i reduced it to 1/4 cup white sugar + 1/4 cup brown sugar)
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup) (i used 2 large bananas)
1/2 cup toasted walnut pieces

Makes 16 mini muffins

I halved this recipe for a 9x9 inch pan, also reduced the sugar to 160g instead of 200g. And it turned out to be as the title says - chewy & fudgy brownies! <3

Been busy trying out various recipes. Some successful, some not quite...nonetheless i am still very much on the lookout for easy and yummy recipes!

1. German Cookies (9/10 Yummilicious!). Recipe courtesy of Small Small Baker. Flavors I tried - original butter, chocolate & coffee walnut. I still like the original buttery ones best :D

2. New York Cheesecake. Uber easy recipe from my cousin's friend

Ingredients
3 cream cheese, total 750 g (philadelphia)
0.5 cup sugar
Butter (approx 125 g)
3 eggs
Biscuits (15 pcs) - either Plain soda or digestive

Steps
Crust :
Crumble the biscuits
mix biscuits with butter (on hot pan) until well blended
transfer above ingredients onto pan and press firm
bake for 10 mins at 180 DegC
remove from oven and set aside to cool

Cheese cake :
Defrost the cream cheese until soft (room temperature)
Mix sugar and cream cheese until well blended (in one direction)
Add eggs, 1 at a time, and beat till well-blended

Pour ingredients (B) onto crust (A) using an 8-inch springform pan
Bake for at least 40 mins (preheat oven to 350F / 180 DegC
remove cheese cake from oven , leave to cool
Refrigerate for 6 hours, before serving

Made this today for dinner and I must say that it taste good! In future can simply satisfy my craving at home =)

Ingredients:

1. Garlic
2. Red Onion (i added this coz not enough garlic)
3. Chilli Padi
4. Olive Oil
5. Salt, Pepper
6. Spaghetti

Method:

Cook the spaghetti according to package instructions in a pot of boiling water (with salt and oil added). Drain when cooked.
Slice up the garlic, red onion and chilli padi (i removed the seeds)
Heat up a generous amount of olive oil (i used extra virgin olive oil since that's the only one i have at home), turn down the fire to low and add in the garlic slices
When the garlic slices are turning slightly golden brown, add in the red onion (this browns really fast)
Stir around till the red onion and garlic slices are golden brown, add in chilli padi and ham
Stir for approx 10 seconds and add in the spaghetti
Add salt and pepper to taste and serve!

I distinctly remember this item from my home econs class back in sec 1 (or 2?) and I really loved it back then. Did a search thru google, found this recipe and here's the end result! <3

Some conversions I made...
200g of plain flour = 1 and 3/4 cup of plain flour
100g brown sugar = slightly less than 3/4 cup brown sugar

Tried this out on Saturday. A few changes I made:

1. reduced the sugar to 3/4 cup (still a little too sweet, might reduce it to half cup next time)
2. reduced the number of eggs to 2, and added water instead after folding in the flour coz I realised the mixture is too dry
3. added the vanilla extract last coz I totally forgot about it

Also, instead of using a mixer, i used a spatula to mix up the stuff.

During the baking, the top part dried up too fast...maybe I need to adjust the rack position halfway through the baking process....in all, it's not a howling success but i would give myself a 60/100 for this try coz I quite enjoy the cake myself though it's not v pretty looking and might have some inconsistencies in the overall cake texture :P

Savi's my first perm job, and it's also the place where I learnt heaps. I'll always remember the laughter and tears we have had....the early days of 4.4.1, 4.5, 4.6.1 when we OT and OT and OT....then the days of 5.0, DoD 5.3 (more OT)...then Edge 6.0, SmartChain 6.0 (scrum time = less OT).

Then again, if not for this, perhaps I'll be stuck in Savi for many years to come. So in a way, it's good coz' it allows us to seek out new adventures elsewhere :)

Today may be the end of Savi, but it's definitely not the end of the friendship we've built....cheers to the many years ahead of us

I never thought it will happen to someone I know, let alone my own mum....I'm starting to dislike going to NUH but at least the nurses and docs there always carry a smile on their faces though that doesn't make it easier by half....but then again, I'm RELIEVED coz' it's contained...I just hope that everything will go smoothly and she'll recover soon...but it is going to be a tough 2-6 mths ahead at the very least...I will be strong and have faith. change to auto car lessons? juz had my 4th lesson yesterday...uber demoralizing....tons to remember but that's not the problem...problem is translating them into actions! *pulls hair*

1. to move off from a stop, change to 1st gear, release clutch gradually until biting point. Step on the accelerator lightly if car starts vibrating. Then slowly release clutch.
2. always change up to 2nd gear after move off.
3. muz change up fast
4. approaching gradual bends, muz change down to 3rd gear
5. muz change down to 2nd gear when turning left/right
6. make use of engine brake to slow down, car will not stop even if u r not accelerating
7. to brake, step on the brake firmly, then slowly reduce pressure on it once u feel it slowing down
8. clutch in when u hear the rolling sound when braking; maintain the same pressure on the brake when clutching in
9. always step on clutch and brake at traffic junctions
10. die die also muz stop at 'STOP' sign, even if there's no cars or pedestrians around.

Yes, I've been there for many times already....1st 3 trips were in May, Oct, Dec 2006 and the 4th in April 2008....I wanted to go tw but Jie juz went there last sep and she wasn't keen to go again...so....

It's my 2nd holiday trip with Jie. The 1st being an all-expense-paid-for trip (albeit it's paid by her) to Melbourne in Nov 2002, and now the 2nd, and one for which I can pay for myself :)

Jetted off at close to 11pm on Asiana

Took the airport shuttle bus to Sejong Hotel. Got Shin from Namsan Guest House to pick us up as the lazy cousin didn't want to lug her luggage down and up the infamous staircases of Seoul subway stations
1st stop was Yongsan - to try to find the stylus that Ling and Sandra wanted but alas! that is only available online. Had a really nice and dirt cheap shabu-shabu lunch @ 5,000 won ea.
Hit Myeong Dong straight afterwards and the 2 of us were like prisoners set-afree, buying things as if they are FOC....and we managed to stuff ourselves super-duper full with street food

Went to HRC at Itaewon. We didn't know there's a HRC in Seoul until we saw a recommendation of it on the travel guide on the plane...Jie had to go there to purchase her signature pin and I had to get a tee of coz. Oh, and this is where we got our first sighting of sakuras hehe...
We then hit Namdaemun. Got waylaid by a v friendly china lady and we ended buying all the seaweeds we wanted to purchase at a later date....we then paid a visit to Namdaemun Gate which is under repair from that fire it suffered a couple of months back...nothing much to see since it's all walled up, but can see tons of writings on the walls by good-wishers or maybe not since I don't understand hangeul.
Dinner was my long-missed spicy rice cakes at Sindang. *slurp*

Insa-dong. This is where you get chopped like a carrot cake if you are a foreigner :0 but it's worth a visit for the layout of this area is vastly different from the usual haunts
We then went to Samilgyo, that beautiful stream that Ling and I chanced by on our last trip. It remains a wonder to me that they can construct something like this in a middle of a bustling city.
Dongdaemun was next. Nothing much here except for the usual shopping
Night was when we hit Namsan Park. Even at 8pm at night, there's tons of pple making their way up there, and most of them are couples! It's rumored that if you propose in NP, you will not fail. The night view from Seoul Tower was beautiful. If you have been to NP in the day before, then you should go once at night too as the view and atmosphere is very different. There's even a 'fire' display show.

Flowers time. We hit SeoulLand for tulips. And that's all we got. Not a place worth going unless u wanna see tulips in seoul during spring
We then hit Kim's Club - that 24 hour supermarket that Lucia showed me and ling before...I love korea's supermarkets with their galore of stuff :D

Finally, Namiseom! The place where you get to see tons of '2 rows of tall birch trees'. It's a small little island which can be navigated within 2 hours, on bicycle...If you walk, might need 5 hours. Koreans come here for picnics, team buildings. It's amazing.
We then headed to Yeouido Park back in Seoul, in the hope of seeing '2 rows of sakuras' but that is not meant to be...the ones we saw are scattered all over the area, not shiok enough....

Sokcho - a four-hours express bus ride from Seoul. This is where Mt Sorak is located. We stayed at Kensington Hotel, one that is highly recommended on the Internet but erm...both of us think it might be haunted.

Having checked in at close to 2pm, there really isn't much chance to go trekking the longer routes so we settled for the dunno-wat fortress. The view up there is breathtaking but super cold! From there, the mountain we saw is all rocks. Not much greenery in view but hey, it's a very nice place for foto-taking. The 2 of us started fooling around with the cam and yes, my fave pic from this trip was taken here.

We then paid a visit to the gigantic Buddha statue and we had our wishes written on a brick for 10,000 won. Is it for charity? I'm not sure.

We asked for late checkout at 2pm so morning, we decided to head down to the beach for some sightseeing. We ended up getting down the bus, in the middle of no-where, coz' we saw rows and rows of sakuras! Cam-whoring begun, right smack in the middle of the road hahahahahahahaha
After about 1 hour plus of sakuras, we then headed back to the hotel, but instead of going back to our room straight, we decided to take 'artistic' fotos in the huge hotel garden area. Anyone who saw us would have laughed at our antics but that's one of the nicest and fun mornings we had :D
We reached Seoul at around 7pm. Ended up shopping at Gangnam for 2 hours. That's one of the shopping places I will recommend. You can get more stuff here than at Myeong Dong, Namdaemun or Dongdaemun!

Relaxation time at Dragon Hill Spa. A nondescript bathouse located next to I-Park mall at Yongsan. What we saw on korean dramas literally came alive. For 10,000 won, you can stay in there for hours and steam yourselves silly. We had to eat the eggs but no, we didn't try to crack them with our heads, it's too hard! Oh, and nakedness is really required when you have to shower. No cubicles to hide in. But ok la, all ladies mah. Just have to get used to it
We then hit Ewha Uni at Sinchon for lunch and shopping. Had a not-so-yummy seafood thingie. But nothing much here to be exact, it's pretty much wat you can find in MD or Dongdaemun.
We followed up with last minute grocery shopping at Lotte Mart. We met a fellow Singaporean here! She overheard us talking and tot we sounded just like her hahahahahaha. I bot chocs and sweets from here to feed the hungry ghosts back in Savi.

We only had time to get more masks :P and a quick lunch at Andong Chicken. I missed that pot of well-braised chicken, potatoes, carrots and dong fen. Yummmmmmm
We reached the airport at 2.30pm. Were worried sick that we'll get charged for excess baggage - me 25kg, Jie 31kg. But thank goodness, it's our lucky day coz' the tourist next to our counter got charged :P

We finally landed in SG at 9.30pm. Seng came to pick us up, otherwise really dunno how the 2 of us gonna get home, with the amount of baggages we are lugging around.

In all, a fun-filled trip. And it's one which I went for a pure holiday, no star chasing involved. Seoul itself is only worth around 5-day travel, so it's a must to travel out of Seoul for max fun. Next time, I'll want to go Busan and Jeju ^_^

6 of us went to the Singapore Air Show 2008 yesterday (tickets courtesy of Lockheed Martin). The acrobatic air display by the Black Knights was fantastic, so was the weather. The sun was so strong that I not only got a red nose and tanned arms, I also got a fever which went on last night and today, with it hitting a high of 39.5C at 4.30am this morning. Needless to say, I'm on MC today....definitely something to remember by

Had a chill-out session at Timbre I yesterday with the usual gang. Last night was Timmy band's last perf there. They'll be "re-located" to Timbre II, so I guess that'll be our next target :P Anyway...purpose of this entry is not about Timbre or Timmy....it's about a stoopid cat.....

We ended the session at close to 1am and Byeo dropped me off....when I got out of the lift and was about to turn to my house, there it is - a damn fat cat sitting right outside my house! Ehh...my natural reaction is to scream for my mum (not that I expect her to be awake at this time). As I was screaming "Ma Maaaaaaa!!!", the stoopid cat suddenly got up and my Maaaa became a "AHHHHHHHHHHHHH!!!!". Think the cat got scared and ran off towards the staircase...and erm...I scared my bro too (who was fiddling with the PC at that time)...he tot I was assaulted or something....sorry bro :P

after the ordeal, i sent an sms to aud and cl...

Me: Juz now came home, got a big fat cat sitting rite outside my house. I screamed and scared my bro lol

backdated post....last wkend, a group of us headed to Colmar Tropicale@Bukit Tinggi. a group of us = aud, aud's sis, CL, shanice, sslim, celim, say gay, elvin, elvin's sis, kelvin and me of coz'. so how did we end up going as a group? gotta 'thank' sslim & CL for that...sslim wanted to go and he asked CL who, in turn, asked the entire QA...so there you go, a 'whole-village' trip!

6 oct 2007. i got up at 6.15am to wash up. met CL at bugis MCD for b'fast before heading to golden mile for the bus ride. somehow, the 2 of us ended up being the last to arrive :P the bus ride was rather comfy with in-built entertainment system. kinda like taking a plane ride :D i finally got to watch 'She's On Duty', uri Gong Yoo oppa!

after switching to another mini-van at Times Square-KL, we finally arrived at our destination at close to 5pm. the original plan was to play paintball once we arrived but the road jam screwed things up and so we had to switch our 2 days itineary around.

we fooled around in the japanese tea garden till around 6.30pm after which we headed back to the resort for dinner. dinner was a boring affair. not much food choices over there so we ended having a buffet dinner at the hotel.

after dinner & shower, we headed to the guys' room for a drinking session! we bot vodka and some other drinks. wat best way to finish up these drinks? play 7-up! say gay was the funniest. she kept going...."21...ahhhhhhh".... "27.....ahhhhhhhhhhhhhhh" hahahahahahahahahahahahah! we finally finished all the drinks at close to 12am. 12am! bloody early lor, by my standards but we were damn tired so the bed was really very much welcome :P

the next day, we woke up at 6am+ so that we can have b'fast at 7am before heading for our paintball session at 8am...it was my 1st paintball session. was quite scared initially as i've heard the others say that it's HURTS if you get hit. but during the briefing session, i learnt that there's actually a 20-feet boundary between the 2 teams during the game, so phew! the game was really tiring but fun! i didn't get hit at all coz' i was hiding behind the bunkers, playing the shooter role :P the others can't believe i was not hurt at all...ok la, next time i'll try the 'catch the flag' role lor.... :P

Ingredients: 1 roti prata (frozen pack), 1 banana, hershey's chocolate syrup

1. heat up the wok and pan-fry the roti prata till it's golden brown on both sides
2. cut the banana into slices and place it on top of the prata
3. pour hershey's chocolate syrup over it

Tada! kev's self-made banana prata! yummlicious! think next time i gonna try out with other fruits like kiwi, strawberries...and maybe even grated cheese hmmmmm

attended XJ's 21st birthday party...darn hot day and her place is all the way in tampines...so darn far....

the dear girl saved us her super pink, dreamy bedroom coz' that's the only room with aircon and she knows Suz can't stand heat hahaha....so we juz cooped up in her room till it's time for makan :P instead of the usual catering, all the food were prepared by her aunts and it's PRO standard. i will love to be their niece too haha....

so what befits a girl with a pink, dreamy bedroom? a pinky pink cake! haha....looking at her, i will never imagine her room to be that pink but hey, she loves pink & blings, like moi! her room is inspiring me to paint mine pink too....see when i do get down to it then.....
